Chef Chris Wilmot’s journey from a challenging upbringing to a seasoned culinary artist is a testament to his determination. Born on the central coast of New South Wales, Chris grew up in a household where his single mother worked tirelessly to provide for him and his two sisters. Despite financial hardships, they always had what they needed, thanks to his mother’s unwavering dedication. At 14, Chris’ life took a turn as his family moved to Victoria, where he was introduced to his stepfather, a laid-back surfer. Their subsequent move to sunny Queensland at 16 saw Chris embarking on a career in plumbing, only to realise that his heart wasn’t in it. A period of uncertainty followed, with Chris trying out various jobs.

At 20, Chris’ life changed once again when he met his wife, who ignited his interest in cooking. Determined to impress her, he pursued a culinary apprenticeship. Under the mentorship of Pete Ireland at Coffee Cat on Kings, Chris honed his skills and discovered his true calling. Moving from kitchen to kitchen, he absorbed knowledge and experience, finally finding a mentor and friend in Head Chef Juddo at a brewery in Birtyna. Juddo’s guidance elevated Chris from a skilled cook to a capable Head Chef.

Chris’ passion for cooking is deeply rooted in his personal journey of recovery and growth. His dedication to sobriety led him to use his culinary skills to serve others, providing love and nourishment through his dishes. His unique culinary philosophy blends traditional French and English techniques with native and Indigenous ingredients, creating a fusion that pays homage to both his heritage and the land.

Embracing the farm-to-plate concept, Chris believes in sourcing locally and sustainably from traditional landowners. He understands the importance of the journey a dish takes, from its origins on the land to its presentation on the plate. This holistic approach to cooking reflects his respect for nature and Indigenous culture.
