Tim Scott

Tim Scott is the current head chef and owner of Exhibition in Brisbane. Tim was born in Alstonville, a small Northern New South Wales town. After leaving high school early, he moved to Brisbane, where he fell into cooking. Tim’s formative years in the kitchen were spent in Brisbane at the likes of Citron and Gerard’s Bistro. During the early stages of his career, Tim threw himself into work at some of Brisbane’s best restaurants, where he took every opportunity to learn.

Tim has always pushed himself to work with high-calibre chefs, so it was only natural that he would eventually explore outside of Brisbane. After a two-week stage at Martin Benn’s Sepia, Tim landed a coveted position there.​

Stints in Rockpool Est.89 and Automata shortly followed before he moved back to the Northern Rivers to manage the kitchen at Harvest. Shortly after, he opened Joy with his then-partner, Sarah. Joy was a great success, awarded the Good Food Guide’s ‘Australia’s Best New Restaurant’ and Two ‘Chef’s Hats’ in its first year until it shut during the covid lockdown.

Like many hospitality professionals, Tim stepped away from cooking at the end of 2020 but started dreaming up Exhibition shortly after. Exhibition opened in June of 2023 and is a vehicle for Tim to bring together his favourite inspirations; wonderful produce, Asian flavours and cooking over charcoal. Tim is passionate about the traditions found in Asian cooking and loves reconceptualising these flavours through a different lens. Currently, he particularly loves Isaan Thai food, like larb.

Working directly with growers from Northern NSW to tropical Far North Queensland gives Tim unrivalled access to the very best produce. Some of his favourite things to work with are seafood from Tasmania and the Australian Bight, tropical fruits from Far North Queensland and root veg from the volcanic soils around North New South Wales. Tim cannot wait to see what the next year holds for Exhibition.
