On the top floor, with floor-to-ceiling views of the Derwent River, and a menu developed by some of the best hospitality experience in Tasmania, Aløft has developed a reputation for fine dining par excellence in Hobart. You’ll find Aløft on the top floor of the award-winning Brooke Street Pier, a floating four- storey pontoon that bobs in Hobart’s picturesque harbour.
Aløft is owned and run by industry stalwarts, Christian Ryan, Heiki Stanley, Will Priestley, and Paul and Asha McCartney. Glenn Byrnes is at the helm of the kitchen, alongside Christian and a team of talented chefs who work tirelessly to achieve the best quality products that Aløft is renowned for. Pooling their extensive hospitality experience from across the globe, and their in-depth understanding of the demands of modern cooking, Christian and Glenn have crafted an innovative menu that showcases Tasmania’s rich natural stores and unique cool climate qualities.
Christian started his career in Hobart then moved to Melbourne where he worked at Taxi Dining Room before heading overseas to work for Gordon Ramsay as part of the team that reopened the prestigious Savoy Grill. Since returning to Tasmania, he’s worked at The Source at Mona and as Head Chef at Property of: Pilgrim.
His menu at Aløft is subject to seasonal changes and focuses on the finest local produce. All meat is free-range and sourced from local farmers. Locally caught and harvested seafood serves a large portion of the menu, which seems only fitting considering the restaurant’s location in one of Australia’s booming seafood farming regions.
Tasmanian Oysters with kimchi emulsion, spring onion and sesame oil is a popular dish to start the dining experience, combining seafood with flavoursome fruity hints. Smaller dishes such as local Spring Bay Mussels with XO sauce, or Sticky Pork Belly with zucchini kimchi and sesame dressing, will begin to surface on your table, soon joined by larger options such as the Yellow Fish Curry with beetroot and fennel, or the Chargrilled Koji Beef with miso and eggplant. Sweet finishes like the Yuzu Berry Sorbet with yoghurt mousse, or the Condensed Milk and Coffee Ice-Cream, are ideal to cleanse the palate after a richly flavoured meal.
Every good dish needs a good glass of wine by its side, and Aløft has you well catered for with a wine list built around sustainability, drawing bottles from both overseas and local vineyards. You can sip the evening away with the assurance that each drop is of the utmost quality.
Pop into a bar seat to overlook the open-plan kitchen, watching where all the magic happens as Glenn, Christian and the team are busy at work.
