Short for Establishment, est. is a long- standing, fine food institution. It’s also one of Sydney’s most elegant dining rooms, with equally exquisite food to match.

Head Chef, Jacob Davey, recently took the reins when former Executive Chef, Peter Doyle, retired after 15 years overseeing the restaurant. Jacob continues to execute Peter’s contemporary Australian cuisine with a menu that continues to evolve, while he explores the interplay of classic flavours with local ingredients.

You will find a balance between the drama of this timeless setting within a heritage-listed building, and the seasonally-driven menu and extensive wine list, curated by Head Sommelier, Dheeraj Bhatia.

Whether you’re there to close a business deal or to celebrate a special event, est. is the ideal spot for lunch. Start with an aperitif of Campari and freshly squeezed blood orange juice, or if the occasion calls for it, a glass of Ruinart Champagne.

It’s a slightly more casual arrangement at lunch, and you can order from a set price menu, dependent on how many courses you choose. Tantalise your taste buds with Freshly Shucked Oysters with ponzu sauce and white sesame oil, before moving on to the deliciously tender Slow-Cooked Pork Jowl served with crunchy crackling, parsnip cream, pickled pear and prune puree. It even has the surprising addition of coffee.

Other delightful choices include Butter- Poached John Dory, paired with squid, zucchini and romesco, and topped with a zingy grapefruit emulsion which keeps the dish in balance. Or go for a dessert like the Whey Poached Pear with sauternes ice-cream, pear sorbet, caramel cream and malt meringue.

On Friday and Saturday evenings, est. takes the pressure off your decision-making by offering either a four-course chef’s menu or the seven-course tasting menu. Both are designed to showcase the breadth of Jacob’s culinary experience, and will take you on a flavour journey like no other. A selection of artisan cheeses is also available as a supplementary course, served with quince paste and fruit bread.

It’s also impossible to look past the wine list. est. is committed to sharing their passion for wine with drops designed to accompany each course’s unique taste. There is also an impressive selection of organic and biodynamic wines, alongside an exciting cocktail list that includes classic and contemporary offerings.

Set in this heritage building with soaring white columns and luxurious trimmings, est. is the kind of restaurant you’d expect to find on Fifth Avenue in New York. Everything down to the crisp white tablecloths, elegant crockery and silverware evoke a lavish experience.
