Fred’s is the trailblazer for sustainable food offerings and has been immensely popular since its opening.
Fred’s is just another instalment from Sydney’s hospitality empire, Merivale. With over 40 venues across the city, the Merivale team are no strangers to the secret behind what makes a successful restaurant and bar in Sydney’s eastern suburbs.
Fred’s kitchen is headed by Danielle Alvarez, whose passion for sustainability and ethical eating is evident in her menu. Having studied under Alice Waters, who is responsible for ushering in the farm to table food movement, Danielle has passed on this knowledge to a carefully curated team, equally committed to producing the freshest fare possible.
Everything produced in Fred’s kitchen is cooked on free- standing Tuscan grills and over a custom-made hearth.
“Cooking with fire is first and foremost about flavour,” said Danielle. “But I also love using it because I think working with an open flame makes you a better chef – you have to use all of your senses.”
The seasonally driven menu changes daily according to the finest quality produce available, so expect the unexpected during any given visit. Offerings may include dishes like Slow-Cooked Ocean Trout served with broad beans, radish and wild fennel drizzled in zesty lemon or Wood-Oven- Cooked Fazzoletto Mushroom Ragu with peas and parsley, and topped with a generous helping of creamy burrata. While you might struggle to choose just a handful of dishes, be sure to leave room for dessert, as a bite of Rhubarb and Amaretto Gateau will top off your visit.
Drinks are taken care of by the trusty mixologists from Charlie Parker’s Bar downstairs. Led by bartending duo, Sam Egerton and Toby Marshall, Charlie Parker’s maintains the sustainable and produce-driven focus of Fred’s menu while bringing to the forefront new flavours and combinations that ideally complement the food offerings. Start with Fred’s Old-Fashioned cocktail, combining olive oil, avocado seed, Makers Mark bourbon, honey ginger and bitters before working your way through the carefully curated list of seemingly endless wines and spirits.
Fred’s food offering is paired not only with great booze but also a gorgeous, understated surrounding that lets the food do the talking. From touches of French provincial architecture to contemporary galvanised steel finishes set against simple whites, browns, and pastel pinks, blues and greens, this fresh take on an old-school Paddington dwelling fits right in, with a nod towards both a modern- day edge and a sense of history.
