Modern European Cuisine
How does one improve the classic flavours and techniques of modern European cuisine? Add a Tasmanian twist, of course. Geronimo Aperitivo Bar and Restaurant does just that, cleverly combining the best elements of both to create something truly special.
Geronimo is the brainchild of Jeremy Kode, who came up with the idea during his extensive travels through Europe. While working overseas, he became increasingly interested in the food and beverage experience and its importance in hospitality. After 10 years, he returned home with a wealth of knowledge behind him, and decided to pursue his own venture.
Enter Geronimo, a space that brings together the very best of hospitality, European dining and Tasmanian produce. Jeremy enlisted the help of chef, Sam Pinkard – formerly of Remy de Provence and Saffire – to oversee the fresh, seasonal menu. Sam’s experiences in both rustic French cuisine and sophisticated, high- end cooking make him a perfect fit to head the kitchen.
The kitchen team works closely with small producers to ensure nearly all of the produce used is locally sourced, whether it be from their family farm or surrounding businesses. This emphasis on beautiful ingredients means the menu changes regularly – over a 15-month period, it changed 10 times.
While the dishes and ingredients may change, there are some constants on the menu. Simple, yet well executed, it runs from nibbles and small plates to large share plates and wood-fired pizzas. Pizzas are topped with ingredients like pork belly, peppered pancetta, crème fraîche and potato crisps, and lamb, eggplant, baba ganoush, basil, capsicum and yoghurt.
Other options may include Pepper-Crusted Tuna, Brisket Sliders, Roasted Carrot Tortellini, and a Seared Wallaby Fillet. All of these dishes can be perfectly matched with a beverage from the extensive drinks list, designed by Jeremy himself.
The seasonally changing cocktail list could include anything from a Geronimo twist on a classic – think Espresso Martini And Bloody Mary – to something more suited to the temperature, like a refreshing Monkey Mule – cardamom-infused vodka, fresh chilli and ginger topped with ginger beer. Jeremy has also compiled a 300-strong wine list, with drops from both Tasmania and Europe taking centre stage.
Like all aspects of Geronimo, the design is elegant and sophisticated. A stunning marble bar marks the spiritual centre of the space while tables made from recycled Tasmanian timber are sprinkled throughout, aptly lit with Israeli and Greek pendant lights. On warmer days customers can choose to sit outside and look to the park while enjoying the food and drink on offer.
Geronimo showcases the very best of Tasmanian produce with a simple, modern European menu, executed to perfection. With a relaxed setting and friendly team, it’s the ideal formula for a great night out.
