Navi

83B Gamon Street, Yarraville VIC

Julian Hills’ first solo venture, Navi, has become one of Melbourne’s most coveted reservations since opening in July 2018. Meaning ‘local’ in Cherokee Indian, Navi is a nod to chef and owner, Julian Hills’ American heritage. It is also a nod to his local surrounds, celebrating the bountiful offerings of Australia's rich terroir.

The two-hatted, 32-seat restaurant offers an ever-changing contemporary tasting menu with extra decadent bites throughout. Presented through a cohesive journey of small dishes, the Navi experience is an authentic reflection of Julian’s creativity, travel experiences and passion for highlighting locally grown and foraged produce, minimal waste and unique techniques.

The menu is a reflection of Julian’s creative vision, changing with the seasons to embrace locally-sourced, sustainable ingredients at their peak. Drawing inspiration from the abundance of Australia’s diverse landscapes, the dishes seamlessly blend contemporary techniques with traditional flavours, resulting in an enchanting symphony of taste.

Each dish is a masterpiece, meticulously plated to evoke a sense of artistry and whimsy. Guests are taken on a sensory journey with every course, experiencing unexpected combinations that delight their palates. The culinary adventure culminates in Navi’s extraordinary desserts. The sweet creations are awe-inspiring, infusing classic indulgences with unique Australian twists. From the Wattleseed-infused Panna Cotta to the Davidson Plum Sorbet, these delightful finales provide a fitting conclusion to an extraordinary meal.

Navi’s commitment to sustainability extends beyond its menu. The restaurant passionately advocates for responsible sourcing and ethical practices, striving to minimise its carbon footprint and support local producers.
